Introduction: Morocco is currently experiencing a change in dietary habits, in particular that related to food preparation methods and eating location. The objective of this research was to study the factors associated with food consumption trends in an agricultural community from the province of El Jadida in Morocco.

Results showed that the synthesized CS-NPs with different concentrations of trisodium polyphosphate (TPP) are irregular – spherical shaped with narrow size distribution and high stability. The microporous chitosan was also synthesized with new features characterized with different techniques as SEM, EDX, FTIR and BET. The synthesized microporous chitosan has a surface area and pore volume of 245.571m 2 /g and 0.155cm 3 /g respectively. Its microporous surface is functionalized with carboxyl and amine groups.
